Ingredients
Bonless Chicken Pieces (boti): 2 lbs or 0.9 kg
Gram Flour (Besan): 3 tbsp
Yogurt: 4-5 tbsp
Salt: 1 tsp (or as to taste)
Papaya Paste: 1 tsp
Garlic Paste: 1 tsp
Ginger Paste: 1 tsp
Red Chili Powder: 1-2 tsp
Coriander Powder: 2 tsp
Cumin Powder: 1 tsp
Lemon Juice: 1/4 cup
Red Food Coloring: one pinch
Oil: 4-5 tbsp
Shashlik Sticks: 1-2 packs (or as much required)
Piece of Charcoal for BBQ Flavor
How to make Chicken Bihari Boti

METHOD:

Make a thick paste by mixing gram flour, ginger and garlic paste, papaya paste, cumin powder, coriander powder, salt, lemon juice, oil and yogurt together.

Soak chicken pieces in the paste, apply well and marinate for 1 to 2 hours.

Heat the charcoal piece, put it on a small piece of foil and place it on the marinated chicken.

Pour some oil over heated charcoal piece and cover immediately.

Place all chicken pieces on skewers (soak all skewers in water for around 20 minutes before starting cooking; this will keep the

skewers wet and hence prevent chicken from burning while cooking).

Now heat the grill pan (or burn charcoals), place skewers and start cooking. Keep turning sides until chicken is cooked thoroughly. (You can also perform the cooking part with frying pan. Fry skewers in pan in 1 tbsp cooking oil or cook in a normal saucepan on high flame).

Cook all skewers the same way.

Serve with hot puri paratha and chutney raita.

actually we take it beef boti from the term boti recipe however I recommend eating chicken bihari boti as well. I make it very often with family and friends and it always gave a wonderful taste. That's why we keep eating these spicy snacks.
