Dissolve the sugar in the water over low heat then bring to the boil. Boil to 220°F. or soft ball. Lower heat and add saffron and almonds. Gradually add the butter. stirring continuously. When the mixture thickens pour into a shallow, greased dish and sprinkle the top with the crushed cardamom. Allow to cool and cut into squares or diamond shapes.
